Orzo-Stuffed Peppers

It's Greek day on Everyday Italian! This recipe is for Margaret, because this seemed like something yummy you and your mom could enjoy:

Orzo-Stuffed Peppers

Ingredients

  • 1 (28-ounce) can Italian tomatoes
  • 2 zucchini, grated
  • 1/2 cup chopped fresh mint leaves
  • 1/2 cup grated Pecorino Romano, plus more for sprinkling
  • 1/4 cup extra-virgin olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 4 cups chicken broth
  • 1 1/2 cups orzo (rice-shaped pasta)
  • 6 sweet bell peppers (red or yellow)

Directions

Preheat the oven to 400 degrees F.

Pour the tomatoes into a large bowl and break apart using a pair of kitchen shears or your finger tips. Add the zucchini, mint, cheese, olive oil, garlic, salt, and pepper. Stir to combine.

Meanwhile, bring the chicken broth to a boil in a medium saucepan over high heat. Add the orzo and cook for 4 minutes. The orzo should be only partially cooked. Use a fine mesh sieve to transfer the orzo to the large bowl with the other vegetables. Stir the orzo into the vegetable mix to combine. Transfer the warm chicken broth to a 3-quart baking dish.

Slice the tops off the peppers and remove all ribs and seeds. Cut a very thin slice from the base to help the peppers stand up.

Place the peppers in the baking dish with the warm chicken broth. Spoon the orzo mixture into the peppers. Cover the dish with foil and bake for 45 minutes. Remove the foil, sprinkle the top of each pepper with cheese and continue baking until the cheese is golden, about 15 minutes. Remove from the oven, carefully transfer the orzo stuffed pepper to a serving plate.

The Dog

Just one day that is not punctuated by dog sh*. That is all I ask.

So, we finally found another buyer for Achilles. This one seems like she'll come through. I am so sick of this dog. On Sunday I managed to clean the whole house, except for Emma's room. Mind you, this was quite the undertaking. Every time I place a pee pad down for Achilles in his cage (we have to keep him in there), he manages to rip it to puffy shreds with his teeth. I thought that pee-sodden shreds of newspaper wafting through your house was bad. NO, this is much worse.
So, not only does he rip it to shreds, he somehow thinks that ingesting the polyurethane will grant him supernatural powers. So he eats it. What happens when a little dog eats potentially hazardous material? He vomits. All over his tiny cage. What happens when said dog is taken out of cage to use the bathroom (we're on the second floor, so this means trapsing through my newly cleaned living room) he shakes whatever liquid that he was sitting in all over the place. I feel the cold drops like dew on a spring morning.
What happens when you have a 4 mo. old who is crying for your attention pretty much all the time and you have a dog who needs to go to the bathroom? Well, I'm sorry Achilles, but you're just going to have to hold it. But he doesn't, he pees and poops in my kitchen, where I awake to find him. Not only this, but his food dish is tipped over and strewn across the entire floor, mixing in with the water from his dish he has managed to tip. Oh, and this is an entirely separate occassion from the time he did everything before mentioned and ripped my kitchen rug to shreds and got into the plastic trash bags, strewing them everywhere. I'm surprised he didn't suffocate himself.

Anyway, I've had enough. Resisting the urge to take him to the pound multiple times (I just can't bring myself to do it) we have finally located a buyer. If things go as planned, we'll be able to drive him up to North Carolina soon, either this weekend or the next. Andy has four days off in a couple of weeks so it looks like it's going to be then, but the end is in sight! I just don't know how many days in a row I can scrub out a poopy cage. Just a few more days I will have to strap Emma to my body and drag a puppy down the stairs to let him go to the bathroom. Nobody ever said I was a dog person, but I said I'd try. Andy and I have agreed that we won't be getting another dog any time soon. I think it's going to be fish from now on, and the kind that stay in their bowls. The kind that are nice. The kind that are low maintenance.

World's Greatest Dad

Just watched The World's Greatest Dad. It was pretty depressing. Don't watch it.

"I used to think the worst thing in life was to end up all alone. It's not. The worst thing in life is ending up with people who make you feel all alone."

Valentine's Day 2010

Seeing that Andy had to work yesterday, we had planned to have our Valentine's Day on one of his days off, which, along with my parent's coming out to visit us this past week, was two weeks ago. Despite this, Andy still managed to come home with a dozen hocus pocus roses and an iPod touch! I have the best husband in the world...

Gift-giving guilt

Do you guys ever feel guilty at the giving/receiving of gifts? I do. Perhaps it's because I'm a stay-at-home mom now and am not generating much money. Perhaps it's because my husband and I are trying to save money. It's not to say that I don't think of my husband when I'm out shopping. I do! I'll pass things and say to myself, "Andy would really like that." In another life, I would buy it (but in that other life, would we even be in the same situation?), but in my present situation, I feel guilty making any sporadic, unplanned purchases.
Then you come to days like yesterday, Valentine's Day, and feel retarded when your husband hands you a brand new iPod and all you have is a card and a box of chocolates... I suppose I could do other things for him. For instance, I decided to clean the whole house for him yesterday - in depth. That is still going on today. I could make him something. I could make an elaborate, romantic feast for dinner for yesterday, but the problem their is money. Would he yell at me for my random acts of kindness?
Anyway, I'll be working on this with my husband. Thankfully, this is something we can talk about together to try to find a solution. It is these problems, I think, when you work on them together, that make a marriage stronger.

Update-
Andy came home from work today with a big pain in his lower right abdomen. He was afraid it might have been appendicitis, so he and Nick went to the minor emergency clinic. It turned out to be simply pain resulting from his hernia surgery a year ago. This was really bad, he couldn't sleep and he said it was the worst pain he's ever had. This also means that his pain shots are wearing off...
Because of his medical situation, he has been told by his superiors that as soon as he graduates from Nuke school that he is going to be denuked. The only reason they are pushing him through the school now is because it would be seen as a failure on the part of the school by if he did not graduate. Naval Reactors is the company that supervises all nuclear operations to ensure their safety and responsibility... basically means they are a pain in the buttocks. Even though the Navy knows that Andy won't be a nuke, they can't let him change jobs now because they have Naval Reactors breathing down their necks. The problem is that Andy is in so much pain that it is hard for him to even generate the motivation necessary to go in their every day. Please pray for him, that he is able to stick it out until May when he graduates and that he gets a new job that he actually likes and can help us prepare for life after the Navy.

Thanks,
KR

What I've Been Into Lately

So, apologies about the pictures of the snow/parent's trip out here, but I can't find my uploader! This has resulted in a total home clean/overhaul in an attempt to find it. It has yet to be found. In other news, I sewed my first linens yesterday! I can finally use a sewing machine (it's not as hard as I had thought it would be!). I made something to decorate Emma's room and I was able to sew on Andy's patches to his new coveralls yesterday... saving us about $20 and a trip to the cleaners!

Anyway, so what I've been into lately... HGTV as always... Their Dream Home Giveaway 2010 is going on now... this house in New Mexico is absolutely gorgeous! I'm entering everyday I can remember to, the deadline to enter is February 19th.

Karmaloop.com added some new stuff... Mainly recent additions to the Alternative Apparel brand. I am in love with their sleeveless layering pieces, T-shirt dresses, and button-down Cowboy shirts. Maybe I can get over that new mom guilt and buy myself something?

Snow!

Last night it snowed for the first time in a long time (I want to say the 80's, but I'm not sure of the actual date) in a long time. It was amazing! We all went outside and played in the snow, making snow angels, snowmen, and having snowball fights with each other! It was so amazing to see this place that I had gotten so used to completely transformed.

I will post pictures later. My parents just left this morning after spending most of the week with us. My mom got here Monday and my Dad joined us Thursday. It was a lot of fun (and HELP!!) to have them here with us. Achilles (the pug puppy) is now a self-respecting dog. He just needed a little attention and to be let out of his cage. There were many times that I just needed another set of hands, and that is where my mom came in. She was so helpful, doing laundry and helping with dishes, just the little things that nobody wants to do. It's amazing how this stuff can easily get out of control.

Well, that's all for now. I will upload pictures from last night and post them tonight, promise!

PS-While my parents were here, they talked with Valerie at Richard Bell Photography (charlestonwedding.com) who said that the Woodlands Inn where we got married was using my pictures to give out to prospective brides! Not only this, but it's going to be in a bridal magazine! Thumbs up for nice things happening in the middle of it all...

Help! How to Cook for a Picky Husband

Ok. I know that I haven't been the best wife with making the meals lately, but I am trying to fix that. I am trying to put together a menu for at least the week, hopefully the month. I have been wanting to go through my new cookbook Giada's Kitchen by Giada de Laurentiis (my favorite). I don't know how she stays so thin with the food she makes, she must not eat it, but it still looks delicious.

Anyway, while going through the recipes for this book, I realize that each of them has something wrong with them. Hmmm... let's see, Swordfish Poached in Olive Oil with Broccoli Rabe Pesto (has swordfish which peaks at summer and fall = out of season = MUY RICO), Grilled Shrimp in Artichoke Tomato Broth sounds good, but, oh, let's see, fresh rosemary? Where am I going to get that? I don't want to have to pay for fresh rosemary every time I make this dish... so I look to see if growing it is an option. It isn't. Rosemary requires about 8 hours of sunlight a day... no can do in our shady patio.
Hmmm, ok. so, next? Salmon with Puff Pastry and Pesto. No. I can just tell you that right now, NO... Roasted Halibut with Grapefruit Fennel Salsa? Sounds delicious! I read the little quib at the top of the page that says that fans of Giada usually mention this recipe as a favorite! "Great!" I say. After reading down the recipe list, though, I notice something I should have noticed in the title - Grapefruit. Andy hates grapefruit, although this recipe sounds particularly tasty and appetizing. It's things like this that make me wonder what I'm doing, or if this is even possible.

Salmon in Lemon Brodetto with Pea Puree.
I'm sorry, did they say pea puree?!!!

Anyway, maybe I'll finish that a little later.

Things I've Been Into Lately

nonsociety.com

A great artsy chique website for stay-at-home types who want something to do!
I first heard of Julia Allison while watching some show on VH1... I think it was about the top 20 stars who had lost like MAJOR amounts of weight. It was very inspiring. Anyway, there's not just artsy things on there. It's a group of contributors who all have something to say... it's very interesting and entertaining.

bobbibrown.com

Due to a recent fall-out with Sephora and I (more on that later...), I am rediscovering Bobbi Brown. I have always been attracted to her for her ability to make anyone look beautiful, not just models. I love her Long Wear Eye Collection - even though it was for the holidays, I still think it makes a beautiful statement. STAY TO WATCH THE METALLIC LONG-WEAR EYESHADOW, please, they really are beautiful. <3 :)

In other news...
The DOG is driving me crazy!!! Thankfully, we have found a buyer. Some old guy in North Carolina just lost his bug and is looking for a replacement (THANK GOD.....) The house reeks of poo and piss. I put him in the bathtub while I attempted to clean out his cage (Andy's old Gandalf costume served as the padding, which Achilles has peed and pooped in multiple times over the past couple days). His water was tipped over, newspaper was torn to shreds everywhere, and his kibble was knocked over. Do you know what wet kibble looks/smells like? You don't know if it's poo or kibble!
We have lost so much money and sanity over this dog... this is the last time I am having an inside dog. We might get a bigger dog (Shepherd) for running, but not until we have a HOUSE with a YARD!!! I wish I would have spoke up sooner.....

So he should be gone by Tues or Wed if this lady comes through. In other news, my parents are coming to stay Monday-Saturday, which will be good. I've been really missing Andy lately. These 12:30 PM - 12:30 AM days are really taking a toll on me. I have to say that last night was an all-time low. I started crying uncontrollably and wishing I had someone to talk to. It was all better when Andy got home, and Nick tries to help. We were supposed to go out yesterday but then realized that Nick didn't have a carseat in his car (duh!), and this was after everyone had gotten ready.

Anyway, good thing this only lasts until Monday, and then he has two days off. My dad will be in Georgia most of the time for a conference, but we will have Monday and Saturday with him. Hopefully it will be a good time! Please pray that we all get along as a family together. :)

Too da loo!

Swings

Andy is on swings. Which means he works from 12:30 PM to 12:30 AM. Which means that if I want the car, I have to drive with him and Emma to work so that I can drive the car back. I do this when I need to do things like grocery shopping, etc. The problem is that I then have to go pick him up at the end of the day. This week that means waiting til midnight to leave and get him... Hopefully everyone will be on time so that everyone (including Emma and I) doesn't get punished with having to stay another half hour... But, alas, this is life in the Navy.

I tried making all sorts of things today. Petite lemon curd cookies, which are built off of the basic
butter cookie recipe, (we didn't have salt, and cookies are horrible without salt! They're all sugar and nothing to differentiate... much like South American, maybe Mexican, cookies. If you want something funny, find someone who has never had American cookies. They will be delightfully surprised at the complex flavors and the way the salt actually brings out the sugar!)
Sorry about that aside, but anyway, I didn't have all the tools for the petite lemon curd cookies (Even though they sound delicious... Three cheers for lemon curd!) I needed a round cookie cutter and lemons... Alas, does the shopping list never end?

So, instead of this, I consented to clean out my pantry. While doing this, I stumbled on a bottle of Root Beer Concentrate Andy and I had bought intending to make our own root beer. Inevitably, we never had done it, not having the sparkling water and yada yada yada... But today I happened to have bought 2 liters of sparkling water for my soda! (I like to mix 100% fruit juices with seltzer water to make a healthier pick-me-up)

So, it's cooling in the fridge right now, but it smells like Barq's! While Barq's does have bite... I have to say that I much prefer A&W. It's just sweeter. But after making my own soda... I really have to appreciate the amount of sugar they put in that stuff! I assure you, well... I'll just have to give you the recipe to illustrate:

Bring 1 1/2 cups flat water to a boil. Add 3/4 c. sugar and stir until completely dissolved. Add 1 1/2 tsp. Root Beer Concentrate. Allow to cool. Place in a pitcher. Once cooled, add 1 liter of sparkling/spritzer water.

When you're actually pouring the sugar in, you realize that it's half of the original water! This is ridiculous!!! Buying sodas with real sugar is a step up from HFC but come on... That's a lot of sugar!

I am going to start making more things myself. For instance - cookies are very good. Not the most nutritious thing if bought from the store, and I'm not saying that making them at home makes them nutritious. But, when you buy baked goods from the store, you get trans fats (partially hydrogenated oils). These are bad. They are little fats that bounce around in your body forever because your body cannot break them down. They were created in the 50's (Crisco, anyone?) as an attempt to make oil solid at room temperature. It is not natural (*shudders). It is evil.
So, it's a step in the right direction, my making cookies at home. It also gives a wonderful air about the house, and, as the instigator of the "heart" of the home, I think it is my duty to make a lovely home. This is getting hard these days with the lack of money, but who says you can't make cookies? :-)

Monday, February 1, 2010

As I watch my daughter who is lying asleep next to me, I don't think anything. I think of how beautiful she is. giant lips, still suckling on an invisible tit. Beautiful, closed eyes. She is everything to me right now. I am so glad she is beautiful.

What It Is To Be Human, Part 1-
Deciding Whether to be Good or Bad

The number one thing that sets us apart from the animals (as far as we know) is the ability to have a conscience. Now, is this conscience "real"? Or, is it just an idea that we have formed in our heads (we humans are very good at doing that)? Take such ideas as the economy, mercy, and (dare I say) God. Is the conscience merely a construct of the human mind. It is true that we do good things to make ourselves feel better. But is this good feeling a result of religion? Religion tells that doing good things gives us a greater stake in heaven, right? So it makes us feel like we're putting a down payment on a mansion.
Do we do things just for the sake of doing well?
You will often hear someone say that. "Why did you do it?" they are being hard-pressed to ask. And the answer is, "I thought it was the right thing to do, " or, "For the sake of the good." Could it be that they are just making a down payment on a mansion?
And what is the disgust we feel after so many wrong decisions have outweighed the majority? Yeah, people will fudge the system for their own benefit. People lie and cheat, they back stab other people and some will even kill for their personal gain. This is ordinary, run of the mill stuff.
But what makes us hate it?
If it really is survival of the fittest, then we should be honoring those individuals who lie, cheat, and steal for their own gain. After all, it takes guts to be that morally corrupt.
But what is morals?

A friend of mine recently told me I was a racist. "Oh really?" I say, "And why is that?" You see, the word "racist" has been thrown around so many times that it has essentially lost its meaning. People are racist now without even knowing it. There are racist thoughts in their mind, little black overtones or sections of the unconscious brain to which we cannot know. And these sections, or so called prejudices, come out in the most subtle of ways.
This is what people would tell you. This is why people would have you think I am a racist.
I think that if people are examining others that closely that maybe they have a little prejudice of their own.

And yet here she is, crying about racism, when all she wants is a little attention. All she's ever wanted is a little attention. "What can I do to attract to attention to myself?" she asks. "What is it about me that sets me apart from other people?" She looks in the mirror and sees that she is black. Nevermind that this has nothing to do with her personality, the essence of who she really is, yet we have made it so.
"Even though I am white, (I have been raised with "white" ideals and values. I have grown up surrounded by whites and in the same economic class as many whites) I will claim this "blackness" so as to appear different from everybody else so as to attract attention." This is the whole reason she calls me a racist, to appear good in comparison.
You see, we humans with our constant desire for self-approval, love to label. We will call things "good" and "bad." We will call things "ugly," "cheap," "dirty," or "disgusting," just to make ourselves feel better. Because, if we label those things that are not a part of us as bad, then it is the only logical conclusion that we are good.

And what is Vogue? What is vanity? What is this sense of self? Are the animals aware of their identity? ... (to be continued)
