Dinner tonight... yum!
Ok so tonight I made a really healthy meal... Hip hip hooray for:
Pecan breaded chicken breasts

Sweet potato fries &

Spinach with walnuts and cranberry salad! (Shown here with mixed greens)

The sweet potato fries didn't turn out as well as they did when I made them in California. Probably because I didn't pay enough attention to them (whoops). Something with having a baby, cooking the rest of dinner, and watching Heroes did it. Oh well.
The pecan breaded chicken breasts held up really well, and the yummy afters tasted like pecan pralines!
The salad is something I make for myself all the time... Just take a handful of baby spinach, sprinkle on some walnuts, then some craisins. Follow by drizzling with olive oil and a sprinkle of Parmesan. You can mix it up, too. Sometimes I switch the cranberries and walnuts for Balsamic Vinegar and onions... Just depends on what you're eating it with!

Alaska!
So, we're going to Alaska to celebrate David's graduation this year. It really is a blessing because Andy graduates from Prototype on May 21st and we will get at least a month to move! This lands perfectly during that time and we can go on the cruise. :)
Praise God! This is the perfect thing Andy needed to relax after this program... Finals are due tomorrow. Gotta work.

I've been had!
So I'm kind of mad right now. It seems that the major I thought I was getting through University of Phoenix isn't what I'm signed up for. I wanted to major in English and minor in Business Marketing. After looking at their offered programs, though, (through a hunch on Andy's part) it turns out that they don't even offer that program. I guess I'm majoring in Business? This is totally wrong because to teach college English, I need a PhD in English... which means I need to major in it. Retards!

Procrastination.
So, in lieu of previous post, I will post a bunch of stuff which shows how I have been procrastinating.

Rant/Tyrade on ETH 205
This is a warning for all of you who would want to take the University of Phoenix's ETH 205/Cultural Diversity class. It is a load of shitaki mushrooms. It is a waste of time. It's purpose, in the beginning, is to make you feel like a racist. After they have formiddably formed the idea of your racism in your mind, they then go on to tell you about every other race in America and why the "white man" is keeping them down. I'm not keeping them down, am I keeping anybody down? Who's keeping me down? Nobody but myself.
Now why can't other people just accept that? Even though I refuse to believe that I'm a racist (besides knowing that saying this makes you sound like one...) I really do like people from all ethnic backgrounds. I have friends who are black, Phillipino, Korean, Jamaican, Cuban, Mexican, Canadian... I cannot say that I don't like any one culture, race, or culture across the board.
So why am I reduced to admitted my racism in assignment after assignment intended to make me 1) feel sorry for "minorities" (even though the hispanic american is quickly becoming the majority) 2) Express my sympathy with such sayings as, "I think the government should give out checks to all African American people for the injustices of slavery." And yes, that is an actual quote and opinion of several students in the class.
And I am just left thinking, this is a COLLEGE education?!
Take my instructions for this paper, for instance:

Ay yayay... Ok. I concede. If I wasn't racist before this class, I definitely am racist now. If there weren't any minorities in the US I wouldn't have to TAKE this class, and I would've been all the better for it!!!

Take my instructions for this paper, for instance:
Write a 1,050- to 1,400-word research paper in which you identify the linguistic, political, social, economic, religious, and familial conventions or statuses of four Hispanic groups living in the United States. Your paper must address Mexican Americans, Puerto Ricans, and two groups of your choice from Ch. 9 of the text.
Dedicate an equal portion of your paper to each Hispanic group.
Conclude your essay by summarizing major differences and commonalties apparent among the groups.
Format your paper according to APA standards.
Post your paper as an attachment.
